Ingredients for fennel salad with chilli sauce:
For fennel salad we need: 2 avocados, 4 small fennel roots finely cut, a handful red cherry cut pieces, 2 handfuls spinach leaves.
For the sauce: 2 tablespoons chopped red onion, 2 crushed garlic cloves, 4 tablespoons olive oil, 2 tablespoons sweet chilli sauce, 2 tablespoons lime juice, salt, pepper.
Mix all the ingredients for the sauce in a bowl. Sprinkle the onions at the edge of the bowl to release their flavour and set aside. Cut the avocado in half, remove the kernels and clean the shell. Cut the avocado into sticks and put it in a bowl with the fennel, tomatoes, spinach and sauce. Mix gently and place with salt and pepper.
