2 thinly sliced aubergines lengthwise, olive oil for frying, 1 tablespoon extra virgin olive oil, 3 tablespoons fatty yogurt, 1 tablespoon hummus paste, 1 teaspoon lemon juice, 1 clove crushed garlic, one tablespoon chopped parsley, salt, pepper.
We’re heat up the grill. Grease each slice of eggplant with olive oil. We fry them for 2-3 minutes until they’re ready. Place them on a platter and place with salt and pepper.
