Peppered fennel salad and carrots
Ingredients for salad with fennel and carrots:
We need: 2 large carrots cut thin or grated sticks, 2 fennel roots cut quarters and sliced, a handful cashew hazelnuts, a teaspoon mustard beans, juice from a lemon, pepper salt.
Put the carrots and fennel in a bowl. We heat the cashew nuts for 3-5 minutes then remove them on a plate. In the same pan we heat the oil and put the mustard. Mix and leave for 30 seconds. Put the lemon juice and mix the sauce well. Pour the sauce over the vegetables in the bowl and sprinkle the cashew nuts.
