It is good to enjoy to the fullest the benefits of sweet potatoes, by introducing them into our diet, if not daily at least from time to time. For those who want something buttery next to the potatoes can add a mashed avocado. We can choose the healthiest variants of preparation, either by steaming or baking in the oven. We can serve them alongside green salads.

I could say that it is the ideal dinner because it helps those who suffer from insomnia. Otherwise they are anyway full of undeniable qualities and it is worth consuming them as often as possible. They can be prepared in advance and assembled even before serving. We can bake the sweet potatoes and prepare the cabbage that we can keep in the fridge for 2-3 days. Thus, the preparation of the dinner will take a few minutes. We prepare the sauce just before serving and pour it warm on top of the sweet potatoes.

Ingredients: 4 sweet potatoes, 4 cloves of garlic, 1 chopped onion , 1 tablespoon coconut oil, 1 tablespoon red cabbage , chopped, a pinch of sea salt, juice from a lemon.

For the garnish: 4 bundles of green parsley, chopped.

preparation: we preheat the oven to 200 degrees C. We put the sweet potatoes in the pan on which we have previously put the baking paper. We keep them baking for 40-60 minutes. We gently push with the fork to check if they have ripened.

We sauté in a large saucepan the garlic and onion in a tablespoon of coconut oil, over medium heat, about 5-10 minutes, until the onion becomes translucent and soft. We add the cabbage, a pinch of salt and a quarter cup of water. We cover with a lid and let it boil for 30-40 minutes over medium heat, until the cabbage becomes tender. We mix from time to time with a wooden spoon and add water if necessary.

We cut the potatoes in two and lightly press with the fork to form a gap inside. This gap we fill with as much cabbage as possible. We prepare the sauce even before serving the sweet potatoes. We can double the ingredients for the sauce, put them in a small pan and let them boil over medium heat. After 2-3 minutes the sauce begins to thicken and we pour it hot over the potatoes and cabbage. Garnisim with freshly chopped green parsley and dinner is ready. Enjoy!
