Roast lamb recipe with sweet potatoes and rosemary
This recipe of roast lamb with sweet potatoes and rosemary should not be missing at the Easter table. Roast lamb fits very well with rosemary, and sweet potatoes are a new variant instead of regular potatoes. It is a recipe for 4 servings, which we can prepare in 40 minutes in the oven heated to 220 degrees Celsius.
Ingredients for roast lamb with sweet potatoes and rosemary
We need: 4 lamb chops, 2 tablespoons olive oil, 3 sweet potatoes, cut thin slices, a red onion, cut thin rings, a sprig fresh rosemary (or a tablespoon of dried rosemary), 2 tablespoons mustard, salt, pepper.
Preparation mode
Heat the oven to 220 degrees Celsius (sixth grade). Meanwhile, heat half the amount of oil in a pan and brown the lamb chops lightly on both sides.
On a tray, place the potato slices, onions, put half the amount of rosemary and at the end the lamb chops. Grease them with mustard and put the rest of the rosemary on top. Leave in the oven for 20 minutes.
Tip
Although lamb is the main ingredient at the Easter table, many of us prefer pork. You can prepare the recipe by replacing the lamb chopswith the pork chops. In this case, leave them in the oven 10 minutes longer, because the pork needs a longer baking time.
