Winter salads full of vitamins

I propose some winter salads, simple but full of vitamins that should not be missing from the daily diet. Including these salads in your daily diet will make you feel leaner, healthier and more lively. With these salads included in the daily menu, you’ll have more energy, a clearer mind and a better concentration power.

Beet and ground walnut salad

Scrape a large, boiled beetroot and half a small, raw beet. Add a crushed garlic clove and a tablespoon of vegetable oil. Mix everything well and place a few ground walnuts and a pinch of shredded chives on top.

Vitamin-rich salad

Scrape 50 g of carrots, 75 g of cabbage and 50 g of potatoes. Add 25 g of chopped parsley, 25 g of leeks, two tablespoons of vegetable oil, one tablespoon of honey and 50 g of ground walnuts. Mix everything well.

Carrot salad with celery

Scrape a large carrot and 50 g of celery root. Add a tablespoon of grated horseradish, 10 g of ground nuts and a tablespoon of vegetable oil. We mix everything up well.

Holiday salad

We take a small red or white cabbage (75 g) and cut it into small pieces. Add half a medium-sized, grated carrot, half a pickled cucumber,a 10 cm finely chopped leek, five ground nuts, one tablespoon of vegetable oil and three tablespoons of oats. We mix everything up well.

Sauces and mayonnaise

Purchased sauces and mayonnaises usually contain preservatives, staining agents and other substances foreign to our body, which pollute our blood. That’s why it’s good to make them ourselves.

Lemon oil

Gradually add the juice from one or two lemons as we mix 25 g of vegetable oil.

Walnut mayonnaise

This vegetable mayonnaise is good to be prepared just before the meal. Mix two tablespoons of ground walnuts with one teaspoon of vegetable oil until a thick paste is made. Then add three to four tablespoons of vegetable oil and beat gradually adding the juice squeezed from a lemon.

Cream sauce

Mix the juice from half a lemon with three tablespoons of cream. Add a crushed garlic clove, half a teaspoon of shredded chives or scraped onions and a tablespoon of vegetable oil. We mix everything up well.

Tomato sauce

Mix six parts of vegetable oil with one part lemon juice. Mix with tomato juice and add a little grated celery to taste.

“Rainbow”, a mayonnaise rich in vitamins

Beat two egg yolks, slowly adding three tablespoons of vegetable oil. Mix with a tablespoon of grated celery or a teaspoon of grated onion and add a little lemon juice. We beat well until it reaches the normal thickness of the mayonnaise. We can color it green (with spinach juice), orange (with carrot juice)or pink (with redcurrant juice).
