Salmon, perfect for the holiday meal!

Salmon can be the piece of resistance for the holiday meal. No fish bought, ready prepared is comparable to this salmon in dough, made in the house.

Ingredients for 8 servings: 2 tablespoons olive oil, 3 fennel bulbs, sliced, 2 tablespoons chopped onions, 1 bay leaf, 2 tablespoons cognac, 1/2 lemon, 1 kg tender dough, 2 x 500 g salmon fillets, skinless, 40 g breadcrumbs, 1 egg beaten with a milk spoon.

Preparation mode: Heat the oil and sort the fennel, onion and bay leaf until caramelized. Add the cognac and let it boil. Sprinkle salt and pepper and squeeze the lemon.

We spread the dough in two sheets, as follows: the first 5 cm wider than the salmon fillets and 0.5 cm thick, and the second 10 cm wider than the first.

Preheat the oven to sign 6 ( 200 g Celsius ). Sprinkle the breadcrumb sheet and place a salmon fillet, and on top we put the fennel mixture. Place the second fillet and grease the edges with the egg, then cover with the second sheet, pressing to stick. Bake for an hour, until browned. Let it sit for 10 minutes before serving and serving.

We can serve salmon with sauce. We sauté 3 tablespoons of chopped onions with a tablespoon of oil. We turn off with 75 ml white wine, dry and boil for 3 minutes. Add 150 ml fat cream, 1 teaspoon lemon juice and 3 tablespoons fresh dill, chopped or parsley as desired.

We choose the right wine and the holiday meal will be perfect!

At this special preparation we can try a rosé wine. I chose JP Chenet Grenache-Cinsault, from the Languedoc Roussillon region, France. Rosé wine is obtained from red grapes. The method involves leaving the must almost colourless, obtained by pressing the red grapes, in contact with the skin and pulp of the grapes for a short period of time which can vary from 3-4 hours to 24 hours.

The colour of rosé wine varies from pale orange to intense rosé with reddish tints, depending on the grape varieties and the production method used. The aromas specific to rosé wines are of red fruits, flowers and spring fruits and citrus fruits.
