Ingredients: 1 small yellow zucchini, 8 potatoes, 8 carrots, 1 tablespoon coconut oil, 3 onions, finely chopped, 8 cloves of garlic, chopped, 2 tablespoons grated ginger , 2 tablespoons yellow curry powder, 2 cups coconut milk, 2 teaspoon honey, 1 teaspoon salt, 1 bunch coriander leaves, 1 lime, freshly ground pepper.

Preparation: we put the pumpkin to boil in a suitable pot. We bring the water to a boil and leave on the fire for 5-7 minutes, until the pumpkin softens a little. We drain it of water and let it cool.

We cut the potatoes and carrots into cubes and put them aside. When the zucchini has cooled enough we cut it in half and remove its seeds. We then cut the pumpkin into large pieces and put it back in the pot, along with the potatoes and carrots. We put water in the pot we cover with the lid and boil the vegetables over low heat, stirring from time to time. We continue boiling until complete tenderization of the vegetables.

For the curry sauce we heat the coconut oil in a large pot and sauté the onion over high heat until it starts to knead and smell appetizing (another five minutes).
